Puff Pastry Crisps

Ingredients

Ready Made Puff Pastry

1 egg yolk

1/4 tsp Habanero Puree

Finely grated Parmesan

Method

Preheat oven to 200°C.

Roll pastry out until 3mm thick, brush with chilli-egg wash and sprinkle with parmesan.

Fold over in thirds.

Roll out again to 3 mm thick, cut out 3 rectangles, roughly 5cm x 8cm in size.

Brush tops with chilli-egg wash.

Bake on a lined tray for 5 – 8 mins or until golden.

Set aside and allow to cool.

Goats Cheese Mousse

Ingredients

¼ cup whipping cream

1 tpsp milk

60g soft goats cheese

1 tbsp chopped chives

½ tsp cayenne mash

Extra chives and cayenne puree to garnish

Method

Mix milk and goats cheese to form a paste, set a tablespoon or so aside for garnish. Whip cream until stiff, fold goats cheese into cream, add chilli mash and chives. Set aside.

Mix your reserved goats cheese mixture with ½ a tsp of cayenne puree so that it is bright red.

To Plate:

Pipe dots of red goats cheese mixture on plate. Layer up the pastry and goats cheese mousse, top with a few chives.
